The Spanish dish of Paella (pronounced paw-yeah-yah) has it's roots in the Southern regions of Spain such as Andalusia. It is traditionally made with rice, saffron, chicken and pork. The Mexicans, however, have always been keen to mix, blend and improve on many of the ideas and customs introduced by the Spanish and so - just like religion, language, music and dance - traditional foods from the Old World are also prepared with the typical flavors and ingredients of Mexico.

Our Caletas Paella fuses the fruits of the Pacific Ocean into a delicious, yet easy to prepare dish, which can be made for as few as two people or as many as a hundred! To get started you must first prepare your ingredients:

Paella (For 2)

1 oz. Olive Oil
100 gr. Whole Shrimp
150 gr. Clams
100 gr. Crabs
100 gr. Cooked Octopus (or squid)
50 gr. Fish
30 gr. Peas or Green Beans
50 gr. Chopped Onion
50 gr. Green Pepper
50 gr. Tomato
2 Cloves Garlico
1 Sprig Parsley
1 Pinch Saffron (or Paprika)
250 gr. Rice
1 Cube Chicken or fish bouillon
1/2 liter Water

The first step is to heat up a few teaspoons of oil in a large and deep frying pan or paella dish on the stove at a high temp (if you are cooking for a very large group you can place your pan on an open barbecue.) Then add the seafood (except the octopus) and let it cook for a couple of minutes until you see the color of the shrimp changing. The octopus is added when the shrimp turn pink.

It is important that you pre-cook the octopus for at least 30 minutes in water because otherwise it will have a chewy texture. Then add all of the vegetables and tomatoes into the oil with the rice which you will brown for a few minutes. Next add the Saffron and water (a good idea is to soak the saffron in the ½ liter of water beforehand, so as to even out the color).

The stock is then added along with your mixture of olive oil, garlic and parsley. Stir well and then cover the dish with a lid or tin foil and leave to simmer on a low heat for approx 30 minutes or until the rice is cooked.

Serve with a light cool white wine and enjoy!
